Juicy, tender Fiorucci Hot Capicollo is made from a single cut of whole pork shoulder that is marinated in brine,
seasoned with pepper and spices, hand-rolled, then cured for up to six months. Spicy and fatty, it strikes a delicious balance of juicy and hot, zesty and meaty and is fi ery with the robust fl avors of red pepper, fennel and anise.
Available in 5-lb. packages, Hot Capicollo is typically very thinly sliced and served on sandwiches and pizzas.
It’s also a spirited, spicy addition to a charcuterie board, appetizer tray, or pasta dish.
