Subtlety is always in season with our Genoa salami. It’s made with select pork, blended with mild spices and marinated in red wine – giving it a milder, softer flavor than our traditional dry and hard salami.
Uncured Hard Salami
What tastes more amazing than an all-natural salami? One that’s packed with soft, smoky flavor. Ours achieves its sweet, earthy tones thanks to slow aging and a classic recipe from the Fiorucci family.
Our All Natural Pepperoni chub is a cured, fermented and air-dried salami made from pork that has never been administered antibiotics. It is seasoned with paprika, natural smoke flavor and spicy peppers for a satisfying robust flavor.
Tuscan Kale Harvest Salad
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
½ teaspoon fresh ground black pepper
8 cups chopped Tuscan kale
½ (4-ounce) package sliced Fiorucci® 100% Natural Uncured Genoa Salami, chopped
½ (4-ounce) package sliced Fiorucci® 100% Natural Uncured Hard Salami, chopped
½ (4-ounce) package sliced Fiorucci® 100% Natural Uncured Pepperoni, chopped
2 medium green and/or red pears, diced
1 cup shaved aged Parmesan cheese (using vegetable peeler)
½ cup chopped walnuts
⅓ cup sweetened dried cherries
Prep: 15 minutes plus standing
In large bowl, whisk oil, lemon juice, lemon zest and pepper; add kale and toss. Let stand at room temperature 15 minutes.
Add remaining ingredients and toss. Makes about 10 cups.
