2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
½ teaspoon fresh ground black pepper
8 cups chopped Tuscan kale
½ (4-ounce) package sliced Fiorucci® 100% Natural Uncured Genoa Salami, chopped
½ (4-ounce) package sliced Fiorucci® 100% Natural Uncured Hard Salami, chopped
½ (4-ounce) package sliced Fiorucci® 100% Natural Uncured Pepperoni, chopped
2 medium green and/or red pears, diced
1 cup shaved aged Parmesan cheese (using vegetable peeler)
½ cup chopped walnuts
⅓ cup sweetened dried cherries
Prep: 15 minutes plus standing
Step 1
In large bowl, whisk oil, lemon juice, lemon zest and pepper; add kale and toss. Let stand at room temperature 15 minutes.
Step 2
Add remaining ingredients and toss. Makes about 10 cups.
