Roasted Chicken and Pancetta


Some call pancetta the “Italian bacon” – but the flavor is so richly different, it’s a comparison you’ll forget at first taste. The secret to our pancetta is the preparation. We rub each ham with spices, then marinate and age it for a one-of-a-kind, savory-sweet flavor.

Roasted Chicken and Pancetta


  • 6 Chicken thighs
  • 1 cup Pancetta
  • 2 lb. Potatoes red baby new
  • 1 bulb Garlic broken into cloves
  • 1 tsp. Sage ground
  • Olive oil
  • Sea salt
  • Cracked black pepper


  1. In a large bowl mix all ingredients
  2. Place into a foiled baking tray. Make sure the chicken has the skin facing up
  3. Bake for 35min 425f
