
Pasta e Fagioli with Milano Salami (with wine)
Ingredients
- Olive oil
- 1 stick Milano salami ¼ sliced
- 10oz. Onions diced ½
- 4 ½ Celery diced ¼
- 3 Garlic cloves fine chopped
- 2 tins 19 0z. Cannellini beans drained, washed
- 1 tin Tomatoes crushed 28oz
- 1 tin Tomatoes diced 14.5oz
- 1 ½ cups Ditalini pasta
- Lambs leaf lettuce
- 2 tbsp. Sugar
- 28oz. Water
- Sea Salt
- Cracked black pepper
- Parmesan Shaved
Directions
- Using in a large thick bottom pot, sauté the salami for 5min medium heat
- Sauté onions, celery, garlic in the olive and salami oil until soft
- Add the tomatoes, water, cannellini beans(1 blended), sugar and simmer for 30 min
- Now add the Ditalini, salt, pepper, and salami for 10min more
- Serve in a bowl, finish with the parmesan, olive oil and lambs leaf
