Spicy Italian Herb Tomato Sauce:
2 tablespoons olive oil
4 garlic cloves, minced
1-1/2 cups tomato sauce
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh oregano
2 teaspoons crushed red pepper flakes
For Serving:
1 cup thinly sliced Vidalia onions
4 teaspoons Italian seasoning
4 Italian sub or hoagie rolls, split
4 tablespoons olive oil
12 ounces fresh mozzarella cheese, sliced
12 ounces Pre-Sliced Mortadella
8 ounces Pre-Sliced Small Pepperoni
Spicy Italian Herb Tomato Sauce: Heat oil in a saucepan over medium-low heat; add garlic and cook until fragrant and starting to brown, about 2 minutes, stirring frequently. Stir in tomato sauce, herbs and red pepper flakes; cook until slightly thickened, about 15 minutes, stirring occasionally. Cool; refrigerate in an airtight container up to 6 days. Makes about 1-1/3 cups.
For serving, toss 1/4 cup onions and 1 teaspoon seasoning in a small bowl. Brush cut sides of 1 roll with 1 tablespoon oil; spread bottom half of roll with 1/3 cup Spicy Italian Herb Tomato Sauce. Top sauce with 3 ounces each cheese and mortadella, 2 ounces pepperoni and seasoned onions. Bake sandwich at 400°F until cheese melts, about 10 minutes.
