

Uncured Genoa Salami
Subtlety is always in season with our Genoa salami. It’s made with select pork, blended with mild spices and marinated in red wine – giving it a milder, softer flavor than our traditional dry and hard salami.
Layered Mason Jar Salad
Layer this pretty salad in mason jars for a portable lunch. Take the dressing along in a small container to add and shake before serving.
Ingredients
Balsamic vinaigrette:
2 tbsp balsamic vinegar
1 tsp Dijon mustard
1/2 tsp honey
1/2 clove garlic, minced
1/4 tsp each salt and pepper
1/4 cup extra-virgin olive oil
Salad:
40 cherry tomatoes, halved
1 cup baby bocconcini cheese balls, halved
12 Fiorucci Uncured Genoa Salami slices, thinly sliced
1/2 cup crumbled feta cheese
4 cups chopped romaine lettuce

Total Time: 15 minutes
Balsamic vinaigrette: Whisk together balsamic vinegar, mustard, honey, garlic, salt and pepper; gradually whisk in olive oil. Divide dressing evenly among mason jars.
Salad: Layer tomatoes, bocconcini, salami, feta and lettuce in 2-cup mason jars. Shake well before serving.
Tip: Substitute arugula for romaine for a salad with a peppery bite.
