Crispy Salami & Zucchini Noodle Salad

Ingredients

¼ cup pine nuts
3 tablespoons olive oil
1 package (6 ounces) Fiorucci® 100% Natural Uncured Hard Salami
3 tablespoons red wine vinegar
¼ teaspoon kosher salt
¼ teaspoon ground black pepper
4 cups zucchini noodles
1 cup drained quartered artichoke hearts in water
1 cup halved cherry tomatoes
½ cup black olives
2 tablespoons coarsely chopped fresh parsley

Directions

Prep time: 20 minutes |   Cook time: 5 minutes

Step 1

In large skillet, toast pine nuts over medium heat 4 minutes or until lightly browned and fragrant, stirring frequently; transfer to plate to cool.

Step 2

In separate large skillet, heat 1 tablespoon oil over medium-high heat. Add salami; cook 5 minutes or until crisp, stirring occasionally. Transfer salami to paper towel-lined plate.

Step 3

In large bowl, whisk vinegar, salt, pepper and remaining 2 tablespoons oil; fold in noodles, artichoke hearts, tomatoes, olives, parsley and salami. Makes about 4½ cups.

Step 4

Serve salad sprinkled with pine nuts.
