
Abruzzese Salami Roasted Sweet Corn Chowder
Ingredients
- 1 stick Abruzzese
- 20oz. + 15oz. Corn Kennels fresh
- 3 sprigs thyme
- 2 Garlic cloves finely chopped
- 8oz. Onions – ½c diced
- 4oz.Celery small diced
- 5 cup Chicken stock
- 8oz. Potatoes
- Celery Salt
- Pepper
- 2 tsp. Smoked sweet paprika
Directions
- Brown Abruzzese salami until golden, remove the salami. Using the oil left behind slowly cook the onion, celery and garlic
- Cook the 20 oz. corn with onion mix for 5min, releasing flavor
- Now blend the15oz.corn and add with all the other ingredients except the salami.
- Cook on a slow simmer for 30min
- The last 10 min add the salami
- Serve with crusty bread
