Cranberry-Spice Charcuterie Board

Ingredients

All-purpose flour for dusting

  • 2 cup roasted salted cashews
  • 2 teaspoon granulated sugar
  • 1 teaspoon unsalted butter, melted
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup mayonnaise
  • 1/4 tablespoon fresh lemon juice
  • 1 cup fresh cranberries
  • 1 tablespoon finely chopped jalapeño pepper
  • 1/4 teaspoon ground cinnamon
  • 2 packages (5 ounces each) Fiorucci® Hard Salami, Cranberry and Mozzarella Appetaggio™
  • 1 wedge (8 ounces) Stilton or Wensleydale cheese with cranberries
  • 1 package (6 ounces) Fiorucci® Charcuterie Variety Pack
  • 1 box (5.3 ounces) cranberry oat crisps crackers
  • 1 package (5 ounces) Fiorucci® Prosciutto and Mozzarella Panino™
  • 1 package (3 ounces) Fiorucci® sliced Finocchiona Salami
  • 3 Mandarin oranges, peeled and segmented

Directions

Prep: 20 minutes | Serves: 12

1. In small bowl, toss cashews, sugar, butter and pumpkin pie spice. Makes about 1 cup.

2. In small bowl, stir mayonnaise, 1/4 cup cranberry sauce and lemon juice. Makes about 3/4 cup.

3. In food processor, pulse fresh cranberries, jalapeño, cinnamon and remaining 2 tablespoons cranberry sauce 30 seconds or until slightly chunky. Makes about 1 cup.

4. Place cashew mixture, mayonnaise mixture and fresh cranberry mixture in 3 separate bowls; place on large wooden board or serving platter. Arrange Appetaggio, cheese, charcuterie, crackers. Panino, salami and oranges on board around bowls; serve with beverage pairings.

4. Serve tree with crackers, pretzel crisps and remaining charcuterie slices.
