Nonstick cooking spray
2 packages (16 ounces each) potato gnocchi
1 package (4 ounces) Fiorucci® Diced Pancetta
½ (4-ounce) package sliced Fiorucci® Hard Salami, chopped
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2½ cups whole milk
2 teaspoons chopped fresh sage plus additional for garnish
2 cups shredded provolone cheese
½ cup panko breadcrumbs
½ teaspoon fresh ground black pepper

Step 1
Place oven rack 8 inches from source of heat; spray 11 x 7-inch baking dish with cooking spray. Prepare gnocchi as label directs; drain, return to saucepot and cover.
Step 2
In large skillet, cook pancetta and salami over medium-high heat 5 minutes or until golden brown and crisp, stirring frequently.
Step 3
In large saucepot, melt butter over medium heat; add flour and cook 2 minutes, whisking constantly. Add milk and sage; heat to a boil over medium-high heat, whisking constantly until smooth and thickened. Gradually whisk in cheese, whisking until smooth and creamy; remove from heat. Fold in pancetta mixture and gnocchi; transfer to prepared dish. Makes about 8 cups.
Step 4
Preheat broiler to low. In small bowl, stir breadcrumbs and pepper; sprinkle over gnocchi mixture and broil 4 minutes or until golden brown.
